Ginger Sugar Cookies

These are my very favorite sugar cookies. They are incredibly quick and easy to bake, perfect for people, who don’t like to spend too much time in the kitchen. They taste like best grandma’s homemade biscuits. I added a little bit of maple syrup, just to make the taste more original. My friends love them! They remain fresh for a long time. Next time I’ll definitely double the recipe! They disappear immediately!

  • 2 1/2 cups all-purpose flour,
  • 1 cup granulated sugar,
  • 1/4 cup maple syrup,
  • 3/4 teaspoon baking soda,
  • 1 teaspoon baking powder,
  • 3 egg yolks,
  • 2 sticks butter, softened,
  • pinch of salt,
  • 2/3 tsp ground ginger,
  • 1/4 tsp all spice,
  • 1 teaspoon vanilla extract,
  • granulated sugar, for rolling
  1. Preheat oven to 350°F.
  2. Line two large baking sheets with parchment paper. Set aside.
  3. In a medium size bowl, whisk together the flour, baking soda, and baking powder.
  4. In another bowl, cream together the butter, and sugar until combined.
  5. Add egg yolks, maple syrup, ginger, all spice and vanilla extract.
  6. Add flour mixture and mix until just combined.
  7. Hand roll into balls ( 1 1/2 teaspoon size), roll in sugar and place on a prepared cookie sheet.
  8. Bake for 13-17 minutes or until tops of cookies start to crack.
  9. Let cool for 5 minutes on baking sheet before moving them to a wire rack. Let cool completely on wire rack.

    I am a ginger freak – at sushi restaurants I get plate fulls and eat them ALL! So these cookies – if I made them sugar & gluten free… Would kick butt!

  10. I can’t quite tell what you have on the table there with the cookies … lime and pistachios? I’m thinking those might both find a happy home in this cookie’s batter. They look like they have a tempting texture!

    I do believe I can smell those Ginger Sugar Cookies from here Marcela:) I agree they are probably a bit chewy which is nice. The Maple Syrup is a nice touch. I bet they stay fressher longer because of the syrup. Although, they look so delicious I bet they don’t last long at all!!!
