Quick Cinnamon Rolls

I love this recipe! Perfect for those who are in a hurry. No yeast, no dough-punching, no waiting for it to rise! Perfect for breakfast, brunch or dessert. To make my cinnamon rolls more unique, I decided to experiment and add some peanut butter and coffee to the dough and glaze.The rolls turned out delicious! My friends went insane for them!

Dough:

  • 2½ cups flour,
  • 3 tbs sugar,
  • 1¼ tsp baking powder,
  • ½ tsp baking soda,
  • ½ tsp salt,
  • 2 tbs peanut butter,
  • 1 cup whole milk,
  • ¼ cup heavy cream,
  • 4 tbs butter, melted,
  • 2 tbs butter, softened

Filling:

  • 1 cup sugar,
  • 3 tsp cinnamon,
  • 1 tbs vanilla extract,
  • 3-4 tbs butter, melted
  • pinch of salt,

Glaze:

  • 4 oz. cream cheese,
  • 2 tbs peanut butter,
  • 1/3 cup heavy cream,
  • 1/3 cup butter, softened,
  • 1 1/3 cup powdered sugar,
  • 1 teaspoon instant coffee granules,
  • 1/2 teaspoon vanilla extract

Filling:

  1. In a medium bowl combine sugar, cinnamon, and salt.
  2. Add in vanilla, peanut butter and the 2-3 tbs melted butter. Mix until well combined.

Dough:

  1. Preheat oven to 425°F. Grease the bottom of a cake pan. Set aide.
  2. In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt. Add milk, heavy cream and the melted butter.
  3. Mix it into dry ingredients until just combined, then knead with your hands.
  4. Flour a clean work surface and roll the dough into a 12×10 inch rectangle.
  5. Brush 3-4 tbs softened butter onto the entire surface of the dough and spread filling evenly onto dough and lightly press it.
  6. Tightly roll up the dough to form a log.
  7. Cut into large equal portions and place into the greased pan.
  8. Brush the tops with the remaining melted butter.
  9. Place rolls in the oven and allow to bake at 425°F for about 15 minutes, then reduce temperature to 350°F and allow to bake about 5-10 more minutes.

Glaze:

  1. In the bowl of your stand mixer combine cream cheese, heavy cream, butter, peanut butter, powdered sugar, instant coffee, and vanilla extract.
  2. Whip together for 5 minutes or until everything is well incorporated.
  3. Spread over the top of the warm cinnamon rolls.
