Turkey Quinoa Chili

I absolutely love this quick, easy dish. This healthy Turkey Quinoa Chili is just fabulous can be ready in less than a half hour. It is very well balanced, flavorful and rich. Leftovers are easy to freeze and simplify the task of food prep for my busy week. I totally recommend it!

Turkey Quinoa Chili

  • 2 tbs olive oil
  • 1.5 pound ground turkey
  • 3 medium garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 1/2 medium yellow onion, diced
  • 1/2 medium red onion, diced
  • 1 can diced tomatoes
  • 2 jalapeños, chopped
  • 1 small can kidney beans,
  • 1 small can black beans, drained
  • 1/2 can corn,
  • 1 small can tomato purée
  • 1 tsp dried oregano
  • 1-2 tablespoons chili powder
  • 1 tsp ground cumin
  • 1/8 teaspoon cayenne pepper
  • 1 bay leaf
  • salt
  • pepper
  • 1 cup uncooked quinoa
  • water
  1. In a large saucepan, bring quinoa and 2 cups water to a boil. Reduce heat; cover and simmer for 12-15 minutes or until water is absorbed. Remove from the heat.
  2. Heat the oil in a medium skillet over medium-high heat. Add the onions and minced garlic, cook until slightly soft.
  3. Add the diced turkey and cook for 2-3 minutes.
  4. Add the tomatoes, their juices, chopped jalapenos and bell pepper. Cook over medium heat until meat is no longer pink and vegetables are tender.
  5. Add the black and kidney beans, bay leaf, oregano, chili powder, cumin, salt, pepper and tomato puree.
  6. Bring to a boil. Reduce heat; cover and simmer for 30 minutes.
  7. Stir in corn and quinoa; heat through.
  8. Discard bay leaf.

    Guess I have to give Quinoa another chance by trying your recipe. The previous time that I ate Quinoa, I did not quite like it because it was very hard and crunchy.
